Chef's Profile

Mody Lee Man Tai:

Mody held his first kitchen job in 1983 and worked his way up to Head Chef with his passion for culinary creativity.

Mody joined Pure Group’s Pure Dining as Head Chef for RED SoHo in May 2009.

Childhood ambition…
Having lived in an area with policemen as neighbours, I’d thought about joining the police force. Even after I started my first kitchen job, I still wanted to apply. However, my attention switched to cooking when I understood all the thought and research that went into menu creation – and was amazed by some of the stuff these chefs came up with. Thereafter, I spent lots of time studying and observing in the kitchen.

Favourite food…
I like spicy food and anything with rich layers of flavours.

How you de-stress…
Like most men do – watch football game over a few beers! I like the competitiveness of the opposing teams and the excitement of watching it.

The best thing someone’s said about your cooking…
I created a traditional Chinese menu as a special promotion for a hotel and a few tourists took the time to tell me that I did a great job and had created the best-ever traditional Chinese menu.

If you weren’t a chef, you’d be…
I’d want to be a full-time papa for a long time!! I enjoy every single moment with my kids and I’ll never get tired of watching them grow up every day!
